St. Patrick’s Day Spinach Pancakes With Corned Beef Hash

Are you ready for a St. Patrick’s Day that is jam packed with amazing activities and festivities? Well, you would certainly need a scrumptious St. Patrick-inspired breakfast dish and that is no other than green pancakes, of course! These incredibly moist, bright green savory pancakes feature a fresh oniony bite and custard-like texture that will certainly brighten up your day! First, you have to place spinach, egg, milk, flour, chives, baking powder, ½ teaspoon of Kosher salt along with a few grinds of black pepper in a heavy duty blender. Opt for the medium-high setting and blend everything well. Scrape down the sides of the blender and continue blending until everything is already properly mixed and the mixture features a bright green color. Transfer the mixture into a bowl and add in the cheese. Stir well. Place a non-stick skillet over medium heat. Place a teaspoon of butter into the pan. Heat through the butter and wait until the foaming subsides. Ladle ¼ cup of batter into the skillet. Using the back of the ladle, spread the mixture evenly. Cook until the top starts to bubble. The undersides must be brown and properly crisped at that time. This will take about 2 to 3 minutes. Using a spatula, flip the pancake to the other side and continue cooking for 2 minutes. Serve the pancakes immediately. If you will not serve it yet after cooking, transfer the pancakes to a platter and cover it loosely with foil. Do the same steps for the remaining batter. If needed, add more butter to the skillet.  Place 2 pieces of pancakes to the plates. Top it off with ½ cup of corned beef hash and sprinkle with chives. Place fried egg on the side.
