Pour warm water into a small bowl. Add yeast and let it dissolve in the water. In a separate bowl, place flour. Pour the yeast water on top. Mix the flour and water until all the flour gets wet. Add in seasonings and olive oil and mix everything well. Place dough on a lightly floured surface. Knead it for a few minutes. Place dough back into a bowl. Cover it with a damp cloth and set it aside for 25 minutes. As you wait for the dough to rise, put seasoning and tomatoes in the food processor. Pulse until everything is smooth and place it in the bowl. Once the dough has risen, cut it to create four balls. Flatten balls to create discs that are 5 inches in diameter. Add a few tablespoons of sauce in the dough and spread it well. Add six pepperonis, two slices of mozzarella and sprinkle with parmesan. Cover with another dough then cook in the waffle maker for 4 minutes.
