Pulse the salmon in the food processor for about 10 times. Place salmon into a bowl. Mix egg with tabasco, fish sauce, garlic, tabasco, ginger, shallot, 2 tbsp of cilantro, lemon zest, 1 tbsp of mint, ½ tsp of salt then ½ tsp of pepper. Add the egg mixture and 1 cup of bread crumbs to the minced salmon. Using a rubber spatula, fold the salmon mixture. Rub oil in your hands and shape the mixture into 4 burger patties. Cover the patties with plastic wrap and place in refrigerator for 2 hours. Pour 2 tbsp of oil into a large non stick skillet. Cook each side of burger patties over medium heat for 7 minutes.
