Place a large pot over medium heat. Add in thyme, garlic, onions and olive oil. Cook the ingredients for 3 to 4 minutes. Stop cooking once the onions become translucent. Add the remaining ingredients, except the macaroni. Bring the mixture to a boil. Afterward, reduce heat to a simmer. Cover the pot and cook for 10 minutes more. Add in the macaroni, and allow the mixture to boil again. Reduce to a simmer then cook for about 10 minutes more. Top the soup with grated parmesan cheese. Serve hot.

Coconut Curry Summer Squash Soup

Place dutch oven over medium heat. Saute onions for about 8 minutes. Add in the curry powder and garlic. Continue cooking for 30 seconds. Add in the squash and cook for 2 minutes. Pour the stock into the crockpot and bring it to a boil. Reduce heat to simmer. Do this for 15 minutes. Remove the pan from heat. Place soup in a blender and puree it well. Pour the resulting mixture into a large bowl and add in lime juice and coconut milk. Add salt and pepper to taste. Pour soup into a serving bowl. Pour coconut milk on top. Sprinkle with fresh chopped basil and serve with lime wedges on the side.

Chicken Avocado Lime Soup

Place a tablespoon of olive oil in a large pot and place it over medium heat. Add in jalapenos and green onions and saute for 1 minute and 30 seconds. Add garlic and saute for 30 seconds. Add tomatoes, chicken broth and cumin. Add salt and pepper to taste. Add in chicken breasts. Bring mixture to boil. Reduce heat to simmer. Cover and cook while stirring occasionally. This will take ten to fifteen minutes. Remove chicken from pan then allows cooling for 5 minutes before shredding it using a fork. Bring the shredded chicken back to the soup. Add in lime juice and cilantro. Before serving, add slices of avocados. Serve with cheese, sour cream and tortilla chips.
