Chewy Peanut Butter Cookies

Place baking soda, baking powder, flour and salt in a medium sized mixing bowl. Whisk everything together then set aside. In the bowl of a stand mixer, cream the butter, honey, peanut butter and shortening mixture. Add in the eggs one at a time. Beat the eggs well after adding. Mix the dry mixture to the peanut butter mixture under low speed. Preheat your oven to 350 degrees Fahrenheit. Roll the resulting dough to 1 ½ inch balls. Roll the dough in sugar. Place dates and walnuts in a food processor and grind well. Add in vanilla, cocoa powder and peanut butter. Process everything thoroughly to ensure that everything is properly combined. Roll the dough into a baking mat then roll the baking pin on top. In a separate bowl, combine vanilla, protein powder, peanut butter and coconut butter. Use your hands or an electric mixer to combine everything. Sprinkle the resulting mixture on top of your chocolate layer. Roll the peanut butter mixture out.
