Place baking soda, baking powder, flour and salt in a medium sized mixing bowl. Whisk everything together then set aside. In the bowl of a stand mixer, cream the butter, honey, peanut butter and shortening mixture. Add in the eggs one at a time. Beat the eggs well after adding. Mix the dry mixture to the peanut butter mixture under low speed. Preheat your oven to 350 degrees Fahrenheit. Roll the resulting dough to 1 ½ inch balls. Roll the dough in sugar.
