Place all of the ingredients in a slow cooker. Leave the cheese tortellini behind. Cook the rest of the ingredients for 6 hours. After that, remove the chicken from the slow cooker. Cube or shred the chicken pieces then return it back to the slow cooker. Add in tortellini and cook for 15 minutes. Add salt and pepper to taste. Remove the bay leaves and pour soup into the serving platter. Garnish with chopped parsley.

Place stock pot over medium heat and add in ginger, garlic, Thai red curry paste, and oil. Fry the ingredients for 5 minutes. Add in the chicken and cook until it turns opaque. Add in coconut milk, fish sauce, broth, and water. Have a taste of the soup and add salt and pepper to taste. Divide vermicelli noodles in the bowls. Pour boiling soup all over it. Add a squeeze of lime juice. Garnish and serve.

Spicy Beef Noodle Soup

Put about 16 cups of cold water in the stock pot. Add in the beef chunks, Shaoxing wine, scallions, and ginger. Bring to a boil and allow to simmer for 10 minutes. In the other stock pot, heat some oil over medium heat. Add garlic cloves, star anise, bay leaves, peppercorns and Sichuan. Cook for 5 to 10 minutes. Add in spicy bean paste and stir well. Add in the tomatoes and cook for 2 minutes. Lastly, add the sugar and soy sauce. Get the scallions, ginger and beef from the other stock pot. Pass the stock through a mesh. Bring back the stock pot to the heat and add some tangerine peels. Bring to a boil. Simmer for about 60 to 90 minutes. After turning off the heat, allow the pot to sit on the stove with its lid on for about an hour. Cook noodles according to package instructions. Divide into bowls. Add beef, scallions and cilantro on top. Serve hot.
