Wild Mushroom Frittata with Cheddar, Peas and Green Onions

Preheat the broiler. Place the rack in the second position near the top. In a medium bowl, add eggs, ½ tsp of salt, milk, nutmeg and pepper. Place oven-proof skillet over medium-high heat. Place butter and allow to melt. Add potatoes then sprinkle with pepper and salt. Cook it for 3 minutes. Add in thyme, garlic, mushroom, green onions and a sprinkle of salt and pepper. Cook for 4 minutes. Add peas and cook for one to two minutes. Taste and add seasoning based on your preference. Spread evenly on the pan and top off with grated cheese. Pour eggs over the veggies. Reduce heat to low and cook for 2 minutes. Transfer eggs into the broiler. Broil for 4 minutes. Remove frittata from oven and transfer to a serving dish. Allow to cool before slicing into wedges.

Preheat oven to 200 degrees. Place the baking dish in the oven and let it warm. Place milk, eggs, vanilla extract, ground cinnamon, maple syrup and salt in a large bowl. Whisk until everything is blended. Place 2 slices of bread in the mixture and allow to soak for 2 minutes. Place a skillet over medium heat. Place butter and allow to melt.
