They say that breakfast is the most important meal of the day–but when it comes to weekends, brunch is. After all, who would wake up early to have breakfast during the weekends, right? Since brunch is technically a weekend breakfast, it is okay to eat something a bit healthy for this meal.

There are plenty of brunch meals out there, but most of those include deep-fried hash browns and unhealthy grits. On the other hand, many people think that they have to go out to enjoy a healthy brunch. For your information, you can have a healthy brunch at home. You just need a Le Creuset skillet to prepare the following healthy brunch recipes:

Wild Mushroom Frittata with Cheddar, Peas and Green Onions

Preheat the broiler. Place the rack in the second position near the top. In a medium bowl, add eggs, ½ tsp of salt, milk, nutmeg and pepper. Place oven-proof skillet over medium-high heat. Place butter and allow to melt. Add potatoes then sprinkle with pepper and salt. Cook it for 3 minutes. Add in thyme, garlic, mushroom, green onions and a sprinkle of salt and pepper. Cook for 4 minutes. Add peas and cook for one to two minutes. Taste and add seasoning based on your preference. Spread evenly on the pan and top off with grated cheese. Pour eggs over the veggies. Reduce heat to low and cook for 2 minutes. Transfer eggs into the broiler. Broil for 4 minutes. Remove frittata from oven and transfer to a serving dish. Allow to cool before slicing into wedges.

Zucchini Frittata

Place skillet over medium heat then pour two tablespoons of cooking oil into it. Add onion and zucchini and cook for a minute. Reduce heat to medium-low, cover and cook for 3 to 5 minutes. Add mint, tomatoes, basil, 1/8 teaspoon of salt and pepper. Increase the heat to medium-high and cook for 30 to 60 seconds. Whisk in the eggs and add 1/8 teaspoon of salt and pepper. Add the cooked zucchini and cheese. Stir. Preheat the broiler. Place pan over low-medium heat and add 2 teaspoons of oil. Add the mixture and cook for 2 to 4 minutes. Broil frittata for 1 ½ to 2 ½ minutes. Cut it into wedges then serve.

Preheat oven to 200 degrees. Place the baking dish in the oven and let it warm. Place milk, eggs, vanilla extract, ground cinnamon, maple syrup and salt in a large bowl. Whisk until everything is blended. Place 2 slices of bread in the mixture and allow to soak for 2 minutes. Place a skillet over medium heat. Place butter and allow to melt. Remove bread from the batter and let it drain for a while. Place it in skillet and cook for 2 to 3 minutes. Flip it at least once. Place bread in a serving dish. Top off with blueberry sauce. Serve.

Quinoa Pancakes

Place baking powder, quinoa, salt and flour in a medium sized bowl. Whisk it all together. On a separate bowl, add syrup, butter, milk, eggs and egg white. Whisk until smooth. Combine the two mixtures and whisk well to combine. Place skillet over medium heat and place butter and allow to melt. Place the right amount of batter into the skillet and cook for 2 minutes. Flip and cook the other side for 2 minutes. Do this with the rest of the batter. Place pancakes in a serving dish. Top off with maple syrup and fresh fruits.
