There is nothing more comforting and relaxing than having a bite of a warm and buttery soft pretzel. Just one bite of this comfort food can make the world look like a better place. If you do not know it yet, the best pretzels are the homemade ones. At first, the process may seem complicated but once you get the hang of it, it will be as easy as baking a pie.

Soft Pretzel Bites

No one can ever say no to the traditional soft pretzel bites, especially if it is paired with cheddar cheese dip. Head to Two Peas and Their Pod for the full list of ingredients.

Combine yeast, sugar, butter and 1 ½ cup of water in the bowl of your stand mixer and mix everything well for five minutes. Set it aside. Add in flour and salt and mix using low speed. Turn on medium speed and continue kneading for 3 to 4 minutes. Oil a bowl using vegetable oil. Cover with plastic wrap or cloth and place it in a warm place for 1 hour. Preheat your oven to 425 degrees. Pour 3 quarts of water into a pan and bring it to a boil. Add the baking soda slowly. Get the dough from a bowl and place it in a flat working surface. Divide it into 8 pieces and toll each piece into a long rope. Cut pretzel bites from the rope and boil the pieces for 15 seconds. Remove bites form pan and carefully arrange those on a  baking sheet. Brush the top of the bites with egg wash and sprinkle salt on top. Bake the bites for 15 to 18 minutes. Make the cheese dip following the instructions provided in the link.

Stuffed Rosemary Parmesan Soft Pretzels

Place yeast, sugar, salt and water in the bowl of a stand mixer. Allow to stand for 10 minutes. Add in the rosemary, butter and flour then knead using medium speed for about 12 minutes. Cover the bowl with plastic wrap and allow to rise for an hour. Place parmesan and mozzarella in a small mixing bowl. Place bowl with cheese in a freezer. Preheat oven to 425 degrees. Place parchment paper on two baking sheets. Set it aside. Pour water and add baking soda in a  dutch oven and allow it to boil. Get the dough and divide it into eight parts and roll out each part to create a long rope. Place 2 tablespoon of the cheese mixture in the rope. Roll the dough back into the rope. Make sure that the edges are pinched together. Create the shape of a pretzel. Place the pretzel in the boiling liquid for 30 seconds each, After boiling the pretzel pieces, brush the top with egg wash. Bake it for 16 to 18 minutes. Combine rosemary, cheese, salt, pepper and garlic powder. Using a silicone pastry brush, brush the baked pretzels with melted butter then sprinkle the topping mixture on top.

Pretzel Crust Pizza

Mix warm water, honey and yeast well. Let it stand for 5 minutes. Add 1 teaspoon of salt and flour into the mixture. Knead for five minutes. Place the dough in a floured surface for ten minutes. Pour water to about 2-3 inches of a stainless steel stock pot. Allow to boil and carefully add baking soda. Divide the dough into three equal parts. Place one piece in the boiling water and boil for about thirty to forty seconds. Get the piece using a  slotted spoon and do the same with the rest of the pieces. Transfer the pieces into a baking sheet (make sure it is greased well). Sprinkle coarse sea salt and brush melted butter on top. Bake at 420 degrees for 10 minutes. Spread pizza sauce on crust and top it off with cheese, pepperoni and other toppings you want. Bake for 10-15 minutes more. Allow to cool and serve.
