Make the filling by combining brown sugar, cinnamon, vanilla and apples in a saucepan. Cook on medium heat for about 3 minutes. Whisk together the cornstarch and cider to create a slurry. Stir this into a saucepan and stir for 3 minutes more. Remove pan from heat and set it aside. Using a pastry cutter, work the butter into the flour. Place egg yolks in a small mixing bowl and beat it with salt. Add hot milk little by little with constant stirring. Mix the milk and flour mixture together. Stir until you have formed a dough. Knead the dough for a minute. Divide dough into 6 equal sizes and roll each into a ball. Fill each circle of dough with the apple mixture. Fold the dough and pinch its edges. Place pan over 250 degrees heat and heat oil. Once the oil is hot, add the pies one by one and fry for 2 to 3 minutes on each side. Using a slotted spoon, remove pies from oil. Do the same with the rest of the pies. To make the glaze, whisk together vanilla, milk, and powdered sugar. Glaze the pies while they are still warm.

Mix yeast, water, and sugar in a bowl. Set it aside for 10 minutes. Whisk together the evaporated milk, salt, and eggs in a separate bowl. Mix the two mixtures together. Add in 2 cups of bread flour and stir well. Ass the shortening and add in the remaining flour. Knead the resulting dough on a lightly floured surface. Place dough in a bowl coated with oil and cover the bowl using plastic wrap. Let the dough rise for 2 hours. Pour about 3 inches of oil in the fryer and heat until 350 degrees. Using a pizza cutter, cut the dough into 2-inch squares. Place dough into the fryer. Flip the balls continuously until they have turned golden brown. Coat the fried dough with powdered sugar.
