Preheat oven to 425. Spray the baking sheet with cooking oil. Cut the carrots into smaller slices. Place an all clad French skillet over medium heat. Place butter and allow to melt. Add the garlic and cook for about 3 minutes. Stir from time to time. Add in the carrots and toss to combine well. Transfer carrot slices into the baking sheet. Bake carrots for 22 to 30 minutes.
