Crock Pot Coconut Curry Chicken

Pour coconut oil into a skillet and place it over medium heat. Add in garlic and onion and saute it for about 4-5 minutes or until it becomes translucent. Add in chili powder, garam marsala and curry powder. Saute for 1 minute or until it is fragrant. Stir in salt, pepper, tomato paste and coconut oil. Reduce the heat and add in arrowroot powder. Whisk the mixture until the lumps are completely removed. Turn the heat off. Grease the insides of a crockpot bowl using olive oil. Add in the chicken chunks and pour the cooked sauce on top. Cover the bowl and cook over low heat for 5 hours. Sprinkle with chopped coriander then serve.

Chicken Curry Fried Rice

Place carrots in a microwaveable bowl. Pour water until the carrots are completely covered. Microwave it in high for 3 minutes. Drain the water. Pour oil in a large pan or skillet. Add in garlic and onions and cook until it becomes translucent. Add in the chicken chunks, peas and brown rice. Toss the ingredients well. Add in oyster sauce and continue tossing until the rice is completely covered. Sprinkle toasted almonds and scallions on top.

Curried Chicken & Shrimp Salad

Chop the pineapple in the same way you chop hot dogs. Cut it right down the middle. These pineapple halves will serve as a bowl where you can place the finished salad.
