Short on time should never translate to short on taste, so try out one of these quick microwave hacks that don’t need an oven to taste delicious:
1) A craving for a cake can hit you in a second’s time, without ample enough warning for you to assemble the ingredients and let it bake in the oven. Next time you just have to have a piece of brownie, grab a mug and you’ll satisfy your craving in three minutes. You need your classic brownie ingredients but all in single serving size. That means 2 tablespoons of butter, ¼ cup light brown sugar, 1 large egg, ¼ teaspoon vanilla extract, 2 tablespoons cocoa powder, ¼ cup flour, a pinch of baking powder and salt and 3 tablespoons of chocolate chips. First you’ll have to microwave the butter and brown sugar in the mug for about 45 seconds, and then you can slowly add in the other ingredients. Microwave it all for 2 minutes or 2 minutes 30 seconds; keep checking on it to make sure its rising and you’ll be able to tell when it looks done. Add on whatever toppings you fancy and you just knocked that craving out of the ballpark!
2) Not just for helping out your sweet tooth, the microwave can switch up your daily breakfast routine and cut the time you spend preparing it in half. To start your day off with protein and fuel you with energy make a microwave prepared omelette. Beat two eggs in a mug and then stir in 1 tablespoon of milk, 1 tablespoon of cheese ( or however much you want) and 2 tablespoons each of diced pepper and diced onion. Season with salt and pepper and then microwave for 1 ½ to 2 minutes, checking on it constantly to make sure it’s fully cooked. The best part about a mug omelette is that if you don’t finish it, it’s already easily taken on the go!
3) Finally, get creative with your microwavable repertoire and try a chilaquile. Assemble one egg, one tablespoon milk, salt and pepper, one tablespoon cheddar cheese, five tortilla chips, one tablespoon salsa, sour cream, queso fresco and chopped green onion. Now beat the egg and milk in hour handy dandy mug and add in the spices and then the cheese. Crush four of the tortilla chips into the mug and then add in the salsa and microwave for one minute, adding on an extra ten seconds if you see it’s not done. The final touch is adding on the extra tortilla chip, sour cream, queso fresco and green onion on top of it all and then grabbing a fork and devouring it.
