We have bid goodbye to the coldest season, and it looks like warm season is coming…hopefully! As we all know, spring and summer are perfect times for beaches, road trips and of course—popsicles! During the hottest season, nothing will be more appealing than the taste and coolness of a popsicle. The best thing about popsicles is that they are the easiest thing to make. Preheat your oven to 350 deg Fahrenheit. Place parchment paper in a baking sheet. Arrange sliced peaches in the sheet. Pour honey on top and sprinkle with salt. Toss well to coat. Arrange the slices to for a single layer and roast for 30 to 40 minutes. Stir from time to time. As you wait for the peaches to roast, blend yogurt, lemon juice, vanilla extract and ¼ cup of honey. Refrigerate the mixture. Allow peach slices to cool down then scrape it off the baking sheet and into yogurt blend. Transfer the mixture into the popsicle molder using a  spoon. Insert popsicle sticks then freeze for 4 hours.

Stir mascarpone until it is already smooth. Add in yogurt and mix well. Add in whiskey, maple syrup and the sweetened condensed milk. Put the sliced figs into your mold. Make sure that the figs are pressed to the sides by using a  spoon. Spoon in the yogurt mixture into the mold gently. Insert popsicle stick and freeze for 4 hours.
